This recipe is kind of like “buy one and get one free.” It is a combination of pound cake and a coffee cake….so I guess you could say it would be “make one and get one free.”
Coffee Cake Pound Cake
Pecan Streusel: prepare first
1/2 cup flour
1 tsp. ground cinnamon
1/4 c. butter
3/4 c. chopped pecans
Combine first three ingredients in a bowl. Cut in butter with pastry blender or fork until mixture resembles small peas. Stir in 3/4 cup pecans. Set aside.
Pound Cake Batter : prepare next
1 l8.25 oz. pkg. yellow cake mix
1 3.5 oz. pkg. INSTANT vanilla pudding mix
3/4 cup vegetable oil
3/4 cup water
1 tsp. butter flavored extract
1 tsp. vanilla extract
Preheat oven to 350 degrees. Grease and flour a 10 inch bundt cake pan.
Combine cake mix, pudding mix, oil and water. Beat until moistened. Add eggs and beat well. Add flavorings. Beat 6 to 8 minutes on medium high speed. Batter will be very thick.
Pour 1/2 batter into bundt pan. Sprinkle streusel mixture on top of batter. Spoon remainder of batter on top. Bake for 40 to 45 minutes or until toothpick comes out clean. 12 servings.
