It won’t be long until the squash starts coming on and people will have more than they can eat. Here is a good old southern squash recipe.
2 lbs. squash, cooked
3 TBSP chopped onions
1 cup cheese, grated
1 cup saltine crackers, crumbled
½ cup milk
Salt and Pepper to Taste
½ cup butter or margarine, melted
Cube squash and boil until tender. Drain and mash with potato masher. Add eggs, ½ cup of the crackers, ¼ cup of the butter, milk, onion, cheese, salt and pepper. Pour into greased casserole dish and top with ¼ cup of the melted butter. Sprinkle ½ cup of the crackers on top and bake at 350 degrees for 1 hour, or until brown around the edges. Great side dish with just about any meal..
