This is a recipe my mother used way back when I was a little girl. It is a family favorite since we all love dark chocolate. Remember to double the recipe for a 2 layer cake, BUT don’t double the cornstarch.
Good on chocolate cake, yellow cake or on ANY cake, for that matter!
Richmond Chocolate Frosting
½ cup sugar
3 Tablespoons cornstarch
One 1 oz. square unsweetened chocolate, grated
½ cup boiling water
1 ½ Tablespoons butter
½ tsp. vanilla extract
Mix sugar and cornstarch. Add grated chocolate and salt. Add water, cook until mixture thickens. Remove from heat, add butter and vanilla extract. Spread on cake while frosting is still warm.
